Nourishment & Remembrance: My Easter Weekend Recipes

This Easter was different.

After the sudden and heartbreaking loss of my amazing mother-in-law, the only way I knew how to care for my grieving husband was to do what I do best: create comfort and warmth through food. I set up an altar with photos and fresh flowers, and kitchen became my sanctuary.

Here’s what I cooked this Easter weekend, each recipe crafted with intention and the hope of nourishing the soul.

Rustic French Quiche (Cast Iron-Baked with Blue Eggs & Sweet Potato)

There’s something soothing about making quiche from scratch; it’s requires just enough effort to make something amazing, without being a huge production. I used a rustic pie crust, my husband’s well-loved cast iron skillet, free-range blue eggs from Vital Farms (truly the most beautiful eggs I’ve ever seen), sundried tomatoes, chives, heavy cream, thinly sliced sweet potatoes, and an herby, sharp cheese that added bite.

To make it:

  1. Line a buttered cast iron skillet with your favorite homemade or store-bought pie dough.

  2. Toss in all your ingredients: eggs, cream, sweet potatoes, sundried tomatoes, chopped chives, cheese. No overthinking—just layer it in.

  3. Bake at 420°F for 15 minutes, then reduce heat to 300°F and bake for another 60 minutes, until golden and just set.

The result? Delicate, savory, and soul-soothing. Every bite felt like a hug.

Herbed Lamb Burgers with Cucumber Tzatziki

These lamb burgers were flavorful and full of life. I mixed ground lamb with finely chopped red onions and herby feta, then grilled them to juicy perfection.

Toppings included:

  • A dollop of homemade cucumber tzatziki

  • Arugula or butter lettuce for crunch

  • Soft brioche or pita buns

They were messy and satisfying—everything we were hoping they’d be.

White Wine & A Future Cocktail in Peggy’s Honor

We usually create a signature cocktail with holiday meals, but this year, we chose simplicity (or simplicity chose us)—just a beautiful bottle of white wine.

Still, I know Peggy would’ve loved a special toast. So next time, we’ll make one in her honor:

  • Vodka

  • Keffir lime-infused simple syrup

  • Splash of tonic

  • Garnished with rosemary + a twist of orange

This Easter wasn’t about Pinterest-perfect tablescapes or overly elaborate menus. It was about presence, memory, and quiet acts of love. Cooking gave me a way to process, to honor, and to carry on.
